Easy Salmon Piccata with Fennel Salad
crispy capers, buttery salmon, and a fresh citrusy, dill-heavy salad on the side
When I first made this dish, I wasn’t aiming to create a piccata recipe. I simply seared some salmon in a skillet, basting it with melted butter, garlic, and capers—just a quick and simple caper salmon. But when someone replied to my Instagram story asking for the “salmon piccata” recipe, I realized I had unintentionally made a version of it.
While it’s not a classic salmon piccata, it includes most of the signature ingredients, and the salmon itself comes together in just 10 minutes. The fennel salad on the side adds a refreshing contrast and is made with fennel, dill, red onion, and arugula, tossed in a simple dressing. As long as you wait to add the arugula, it can even be prepped in advance and stored for later.
