Swedish Chocolate Balls
RECIPE #13: The best no-bake recipe you'll ever make, and I mean that with my whole heart
These need very little explaining. They’re a combo of all things delicious–butter, sugar, cocoa, coffee, and more sugar. They’re a classic Swedish treat you’ll find in every (Swedish) cafe you walk into, and are also commonly served at home for fika (a designated snack time).
I used Hershey’s cocoa powder for these because it’s what I had, but I will say that a higher-quality cocoa powder is always preferred. Also, if you use unsalted butter instead of salted, make sure you add enough salt to the recipe. Salt helps to deepen the chocolate flavor.
Roll them in pearl sugar–which you may have to order online–, unsweetened shredded coconut, or chocolate sprinkles. The choice is yours! P.S., the longer you chill them, the better they taste.

INGREDIENTS
1/2 cup salted butter, softened
1/2 cup granulated white sugar
1/4 cup cocoa powder
1 teaspoon vanilla extract
2 tablespoons strong cold coffee
2 cups oats
generous pinch of kosher salt
pearl sugar, unsweetened shredded coconut, or sprinkles to roll in
INSTRUCTIONS
In a large bowl, combine the butter, sugar, cocoa, vanilla, coffee, oats, and salt. Use your hands (or a large wooden spoon) to mix until fully combined. (I don’t like mine all too sweet, but you can add more sugar if desired).
Pour your coating of choice onto a plate. Roll the chocolate mixture into 2-inch balls, then roll each ball in the coating until fully covered. Place the chocolate balls on a plate, then cover with plastic wrap and chill in the fridge until solid, about 30 minutes.
